Product and Process Description:
45 Brix Concord Grape Puree Concentrate is a dark purple, pulpy, very viscous, highly flavorful grape puree concentrate. It is produced from mature, unfermented Eastern US (Lake Erie Concord Grape Belt) Concord Grapes (Vitus Labrusca) by removing stems/ seeds/ other large particulates, then pulping the flesh and skins through a screen, and evaporating. Essence has been returned. No other grapes, grape juices, sugars, or sulfites have been added. It does not contain any genetically modified organisms or any major allergens.45 Brix Concord Grape Puree Concentrate has been processed in accordance with good manufacturing practices under strictly sanitary conditions that meet the requirements of the U.S Food and Drug Administration (21 CFR Parts 110 - GMP and 120 - HACCP) and New York State Dept. of Agriculture and Markets. Packaging:
Standard packaging is a reconditioned open top metal drum with a Brammall seal. Each drum is lined with two food grade polyethylene liners each tied with a self-locking cable ties. Drums are filled to 50.0 gallons (501 lb net). Puree concentrate is also available by request before the September harvest in 5 gallon pails.
Shelf Life and Storage:
The shelf life at <0 degrees F is two years, limited by good stock rotation practices. Grape puree concentrates may develop some sugar and/or tartrate crystallization over long storage periods.
